Sago Pudding
ingredients:
1 quart water
2/3 cup brown sago
1/3 level teaspoon salt
1/2 cup sugar
1/2 cup dates stoned and cut into small pieces
1/4 cup walnuts cut into small pieces
1 tablespoon lemon juice
method:

Soak the sago in one cup of the water for one-half hour. Heat the remainder of the water to boiling, and stir into it the soaked sago, the sugar, and the salt. Cook in a double boiler, stirring occasionally, till the sago is transparent, which will require about twenty minutes. Then stir in the lemon juice, dates, and nuts.

observations:
Serve either warm or cold, with cream or custard sauce.
